As events start to pick up again, buffets of every kind will once more become a staple at gatherings, from breakfast spreads to dessert tables. One essential component of any buffet setup is the chafing dish or chafer. These versatile tools help maintain food at the ideal serving temperature, ensuring guests enjoy their meals just as they were prepared. To make the most of your chafers, here are some practical tips to keep in mind.

Chafers:



1. Always use canned fuel in the chafer's burner. Non-standard fuels can pose safety risks.

2. Before lighting the burner, fill the water pan, urn, or kettle with water. The heat transfers through the water, evenly warming the food inside the inner pan.

3. A low flame is typically enough to keep food warm. Since the goal is to maintain temperature, not cook further, low heat is ideal.

4. Preheat your food pans by placing them in the oven before transferring them to the chafer. This ensures food starts out hot, minimizing heat loss during service.

5. Begin with hot water in the chafer to avoid heat transfer from the food pan to the water, which can cool the system down too quickly.

6. Regularly check the chafer during your event and replenish the water as needed. Over time, the water level will decrease and might need topping off.

7. Never operate a chafer without water. Without it, the base can overheat, creating hotspots that could burn the food in the upper pan.
